Taste in and around Papua New Guinea varies from pure local & traditional to international & cosmopolitan. Hotels offer Western Asian and European cuisine. Port Moresby, Madang, Lae and other larger towns offer some international cuisines primarily the English, Australian and Chinese. In smaller rural areas, the local food consists primarily of tropical fruit, rice, yams, pork (generally roasted) and seafood. Crocodile meat is an exclusive dish. Most dishes are mildly seasoned and presented in a very attractive manner.
Increasing use is also made of fresh local meat, fish, vegetables and fruit, including pineapples, pawpaws, mangoes, passion fruit and bananas. Traditional cuisine of Papua New Guinea is based on root crops such as taro, kaukau and yams, sago and pig (cooked in the earth on traditional feasts). Mumu is a traditional dish combining pork, sweet potatoes, rice and greens. The number of European, Chinese and Indonesian restaurants is rising. Alcohol is readily available and includes Australian and Filipino beers.
