There is hardly anything called ‘uniquely Singapore’ dish, as the cuisines of Singapore are a
conglomeration of Malai, Thai, Chinese and Indian dishes. The cuisines of Singapore are the proof for its cultural diversity. Singaporean literature has declared eating as a national obsession and a national pastime. Food usually is the main topic of discussion for the people of Singapore.
The food culture of this nation is largely influenced by Malai, Chinese, Middle East and Indo-Western. This makes the Singaporean cuisines, a cultural attraction. These multicultural dishes have taken form from the original country cuisines, which are also equally popular. Most sought-after dishes could be found widely displayed in the restaurants and hawker stores.
Certain religious dietary practices are followed by the people here like Hindus do eat beaf, Muslims keep away from eating pork and there are also a certain set of vegetarians. People following various cultures often dine together but keeping in mind that they do not hurt others sentiments. Halal Chinese restaurants are also common in Singapore that caters to the dietary preferences of Muslim community.
There is nothing surprising if a Chinese chef is found using ghee, turmeric and tamarind in these dishes, vice-versa an Indian chef is often influenced by the Chinese style. This multi-cuisine culture is promoted as a major tourist attraction of Singapore.
Some of the popular examples of Singapore multi-cultural cuisines are: Fish head curry, Satay bee hoon, Tauhu goreng and Spicy Kangkung. Western culture has also influenced the cuisines of Singapore as a result of British colonialism. Now the western delicacies are cooked in a different style in order to suite the local taste, for example a typical English dish stewed pork chop is prepared with an additional tomato sauce and served with green peas in Singapore.
Since Chinese covers 70% of Singapore’s population, Chinese dishes are very predominant in the restaurants and local eateries. Some of the most favoured dishes are chicken rice and noodles. Skewers, which is well known as satay is a big hit among tourists. Spicy Indian delicacies like dosai, idli, tandoori and biriyani are hot favourites in local food courts. Mouth watering sea foods are Singaporeans all-time favourite to name a few are barbequed sting ray, fried oyster and chilli crab.
The most preferred and popular drink in Singapore is the Sling. Sling is a cocktail blend made in the Raffles hotel during the colonial period. This pink drink is made of fruit juices, brandy, gin along with a tinge of Cointreau and Benedictine. One can find all sorts of imported rinks in the stores here but locally made beer Tiger is a must try. Among other local drinks explore the locally made jackfruit, mango, banana and coconut juices.
